The British qualifier broke the Spanish world number 18 in the seventh game of the third set to set up the victory.
Edmund, 21, provisionally moved into the world's top 50 after a first-round win over Guillermo Garcia-Lopez.
He will face Davis Cup team-mate Murray next in Beijing if the world number two beats Andrey Kuznetsov on Tuesday.
