Josh Sims ran Everton ragged with his pace and super technique, and poked a cross to Charlie Austin for a debut assist inside the first 42 seconds.
It was Austin's ninth goal of the season as up-tempo Southampton got their mojo back after flat games against Liverpool and Sparta Prague.
