When Maria Hines opened Tilth in 2006, Seattle became a leader in the rare world of certified organic restaurants, a difficult road that few chefs even attempted to follow. Now, Hines is getting ready to host one of her inspirations: Nora Pouillon, who created the country’s first certified organic restaurant before most people thought such a business was possible.
Pouillon is coming to Seattle on tour with her new memoir, “My Organic Life: How a Pioneering Chef Helped Shape the Way We Eat Today” (Knopf, $26.95.) Events in her honor include dinners at Tilth, a reception at Lark and lunch at Tom Douglas’ Hot Stove Society.
