Kim Skiles' Butternut Squash and Sweet Potato Soup & Fennel Chicken with Mushrooms & Grapes

As part of celebrating Labor Day Weekend, we visited with Scott Skiles’ wife, Kim, to provide Magic fans with a pair of dishes to prepare for your personal cookouts this weekend. Enjoy!

Butternut Squash and Sweet Potato Soup

Serves 4 to 6

Ingredients:

2 cloves garlic, peel, keep whole but smash

2-3 TBSP extra-virgin olive oil

1 butternut squash, peeled, seeded, and cut into chunks (or use frozen chunks)

2 large sweet potatoes, peeled and cut into chunks (or you can use frozen chunks)

1 large sweet sweet onion, cut into chunks

½ tsp ground cinnamon (or more if you like cinnamon)

¼ tsp ground nutmeg (optional…leave out if you don’t like nutmeg)

4 cups low sodium chicken broth
