"The sign of a truly great restaurant is if the patron doesn't know whether or not the chef is in the kitchen," Moos said.
Moos obviously is engaging. A hoot, really. He likes to be around people. It's one of his foremost strengths as an AD. In fact, he emphasized that he needs to be around the people of our state and beyond — yes, even the media — so he can spread his department's message.
Here's the trick: In order for Moos to be out and about, shaking hands and telling stories, he needs to feel comfortable that the affairs in his "restaurant" are being cared for at a high level.
