Maybe an even more perfect po'boy topping than fried oysters. Maybe. Simple enough. Take a beef chuck roast, sear it on either side, add some fixin's to the drippings and make a gravy and then simmer til the whole thing falls apart. It can be lunch, or breakfast served over grits or on a biscuit. Just like Mothers makes.

This is another fantastic colder weather dish. First you make a roux, then a nice spicy tomato-based gravy, throw some shrimp in and serve it all over rice.
