Which Cajun/Creole classic do you prefer? Gumbo is typically a little heartier, and much better on a chilly day, but it also takes much more work out at the tailgate. Honestly its usually better made the night before and warmed up at the site. Etouffee is much richer, but may be a little more luxurious than you're willing to go for a tailgate.
