This time of year I find myself constantly craving fresh, bright vegetables instead of the normal heavy comfort foods. Meal prep becomes a snap when all I need is slice an avocado or bite into a peach to feel satiated. And my favorite way to lunch and stay cool at the same time is with a chilled soup that requires nothing more than a knife and a blender. Cucumber and peppers add extra depth to a traditional gazpacho. If you need to feed a large crowd help stretch your veggie stash by adding some day old bread when blending it up.
