As I cook dinner in more and more often I keep trying to find new ways to incorporate vegetables into meals without feeling stale. This cauliflower salad, adapted from Tasting Table, is right up that ally. It is bright and refreshing and easily could work in place of rice or couscous under any grilled meats or veggies. With its versatility (and tastiness!) cauliflower is quickly finding its way into my weekly shopping lists.
