Do you trim and smoke a brisket whole, or do you prefer to separate the "flat" and the "point" to smoke them separately?
If I am cooking a whole brisket, I keep it whole. More often than not, I will cook a flat only, since my wife and kids are heathens who don't appreciate the delicious fattiness of the point.
