Even if you’re not a vegan, you won’t mind there’s no bacon in this Bacon Carbonara at Seasons Plant Based Bistro in Salt Lake City

There’s no bacon in this dish. Or egg yolk or cheese. But it’s rich and creamy enough to satisfy any skeptic. It won’t taste exactly like the classic Roman dish, but you won’t care.

The sauce is made from soaked cashews blended with oil in just the right proportions to replicate the smooth, velvety texture of the egg yolk. The bacon is small bits of smoked mushroom that flavor the whole dish.
